Ancient popular beliefs arise from the commemoration of the dead. In the past it was thought that in the night between 1 and 2 November, the souls of the dead would return from the afterlife on a very demanding journey. Our nougat “of the dead” symbolize the offer of refreshment of the living for their journey.
It is obviously not the classic nougat, the hard one with almonds so to speak, but it is soft and creamy, generally melts in the mouth, so much so that in Naples they call it “muollo”
