The nougat, once a gift for popes and Bourbon princes, is now a small luxury for everyone. One of the Italian excellences, it has always been one of the favorite sweets for the holidays.
At L’antica Grimaldi the dough is made with machines from the 1950s.
After mixing honey and sugar, these ingredients are expected to begin to create the origin of what will be the classic color of nougat: a mountain of white mass. After about 7 hours, the nougat begins to create filaments, synonymous with the fact that the perfect degree of cooking has been reached.
After that, the dried fruit, almonds or hazelnuts of excellent quality are poured. Each subsequent stage of processing is carried out by hand, from the cutting to the chocolate and cream coating, up to the complete wrapping.
Family tradition
Over time, the techniques have not changed, but have evolved into new formats, expanding the range of products, especially as regards the nougat and the crunchy, which we at L'antica Grimaldi offer in three versions: dark or white or, for those who love even sweeter flavors, a mix of the two.
La nostra storia
In the mid-1940s, Luigi Grimaldi, known as Gigino, decided to invest the few financial means available in what in the following years would become his small family-run artisan nougat and crunchy company. Tireless worker, Grimaldi nougat was produced and wrapped by hand, and transported throughout Italy.
Gigino is remembered by all with affection even today, and Grimaldi nougat has become a reference for the production of artisan nougats in the area.
In the 90s, the daughters Titina and Lella, together with their cousin Gennaro, decided to embark on a new phase of the company.
Despite this, the original nougat recipe has remained unchanged, without taking away space for new experiments: new flavors of nougat have been created, accompanied by various covers of chocolate creams, dried fruit and candied fruit.
The main ingredient always remains the quality, the passion, the tradition that push the company forward, which continues to expand.
Today, the third generation, composed of Gianluigi and Rosa Maria Galdieri, and Marina Mele, is currently committed to updating the corporate image to meet the needs of an increasingly evolving market.
Their motto is: “tradition rhymes with innovation!”.
